Green beans go into the roaster on our floor and come out in small batches, so the coffee you drink this week was roasted this week, not last season.

Almost five hundred years of coffee, poured in Tucson.

Savaya’s owner, Burc Maruflu, grew up in Istanbul learning coffee from his grandmother, Neriman, whose brewing was famous in her town. His family has traded and roasted coffee since the mid-1500s.

He brought that training to Tucson, and Savaya was born in the Old Pueblo. Beans from more than forty origins are sourced directly from the farms, then roasted here to a recipe tuned for each one.

Every morning, on both sides of the bar, we get to taste coffee as if for the first time.

Pulled from our own roast. Regulars come back for the lattes and mocha lattes, and the seasonal lavender latte.
Cold brew

Slow-steeped from the tower at the bar. Smooth, low in acid, poured over ice.
Pour-over & French press

Single-origin coffee brewed to order, the way a gourmet roaster should. Ask the barista what is on today.
Kafette Turkish & Greek

Finely ground and brewed in the traditional style, a nod to the family’s Istanbul roots.
